INGREDIENTS

  • 1 Cup Raw Cashews, Soaked For 5 Minutes In Hot Water
  • 1 Red Pepper, Roughly Chopped
  • 1 Small Onion, Roughly Chopped
  • 2 Garlic Clove
  • 1/2 Cup Oat Milk
  • 1/4 Cup Nutritional Yeast
  • 1 Tablespoon FlavorGod Italian Zest Seasoning
  • Salt And Pepper, To Taste
  • Pasta Of Choice
  • Fresh Basil, For Garnish

INSTRUCTIONS

  1. 1 Cook your choice of Pasta according to the package instructions. Before draining, reserve 1 cup of pasta water to adjust sauce consistency later.
  2. 2 In a sauté pan over medium heat, add a drizzle of olive oil. Add the red pepper, onion and garlic. Sauté for 3-5 minutes until vegetables are softened and fragrant.
  3. 3 Meanwhile, in a blender, combine the soaked raw cashews, sautéed red pepper, onion, garlic, oat milk, nutritional yeast, and FlavorGod Italian Zest seasoning. Blend on high speed until smooth and creamy. If the sauce is too thick, gradually add some of the reserved pasta water until desired consistency is reached.
  4. 4 Once the pasta is cooked, drain it and return it to the pot. Pour the creamy red pepper cashew sauce over the pasta, tossing until evenly coated.
  5. 5 Serve the pasta hot, garnished with fresh basil leaves for a burst of flavor and color.
